But in addition to being delicious, I love that this is a pretty kid-friendly dinner, considering you can basically just serve them the noodles and tomatoes and they still have a filling, tasty meal.

I have lots of carrots coming up in my backyard garden right now, and I’m finding it hard to get inspired to use them other than snacking. So, let’s talk eggplant. It’s in season right now, but I wouldn’t rank it among my kids’ favorite foods. But I do think that it’s worth asking them to try new things, and the easiest way for me to get them to do that is, of course, to fry it. I think it’s a great first eggplant dish for kids.
