This One-Pot Chicken and Rice dinner recipe at One Pot Recipes is about as kid-safe as you can get. It’s like a mix between stir-fry and Mexican rice, which are two of my kids’ favorites. This meal also makes great lunch leftovers the next day; just heat it up in the morning and pack it in a Thermos.
