This week, I’m so excited to feature one of my very favorite food blogs: Half Baked Harvest, who’s already a fan favorite in our Recipe Rescue group,

Tieghan Gerard, the lovely woman behind Half Baked Harvest, grew up cooking for her family of 10, which is where she discovered and developed her passion for food and recipe development. She started the Half Baked Harvest blog in 2012 and in addition to writing several successful cookbooks, she has been featured “on The Cooking Channel, Food Network, HGTV, Crate & Barrel, Shape Magazine, Self Magazine, the Huffington Post, and PopSugar, among others.”

I first discovered Half Baked Harvest in 2018 when our very own Caroline featured Tieghan’s Better for You Instant Pot Chicken and Spinach Ramen in this post for Skinny Instant Pot Recipes. Since then, at least one recipe from Half Baked Harvest finds its way into my weekly meal planning.

Here, I’m sharing a few of my personal favorite recipes from Half Baked Harvest that are on constant rotation in my kitchen, all of which I’ve saved using her “Recipe Box,” where you can add your favorite recipes for easy reference, and even make a shopping list. Amazing!

Crispy Miso Katsu Chicken Ramen at Half Baked Harvest

This 30 Minute Spicy Crispy Miso Katsu Chicken Ramen is one of my teens’ very favorite dinners. I discovered this recipe when Kate shared it in a meal plan last year and since then I have easily made it three dozen times. In addition to the spinach, I typically end up throwing in whatever other ingredients I have hanging out in my produce drawer (carrots, kale, mushrooms, and even zucchini that looks a bit sad). My daughter is spice adverse, so I often scale the chili paste way back or just eliminate it altogether and it still comes out amazing every time.

If you love ramen, I strongly encourage you to browse the other ramen recipes that Tieghan has posted on her blog. From a 20 minute Ramen Carbonara to a Crockpot Crispy Caramelized Pork Ramen Noodle Soup w/Curry Roasted Acorn Squash you will be in ramen heaven.

Brown Butter Pumpkin Tortellini Alla Vodka from Half Baked Harvest

I featured this Brown Butter Pumpkin Tortellini Alla Vodka last November as part of a weekly meal plan and it has been requested in my house over and over since then. It’s a yummy, hearty twist on a traditional vodka sauce that comes together in under 30 minutes.

Crockpot Korean Inspired Tacos with Yum Yum Yummm Sauce from Half Baked Harvest

Crockpot Korean Inspired Tacos with Yum Yum Yummm Sauce appeared on the Half Baked Harvest blog just over a month ago and not only is a delicious twist for #TacoTuesday, it is the perfect meal for a busy day when you need the crockpot to do the heavy lifting (there are also instructions for the Instant Pot if you sometimes forget to actually push start on your slow cooker – ahem). My family went nuts over this dinner and it is so so so good.

Miso Butter Grilled Cheese from Half Baked Harvest

This recipe for Miso Butter Grilled Cheese appeared on Half Baked Harvest Instagram page last week and because I was out of town, I haven’t had a chance to try it yet, but oh my goodness it is the first thing I am going to make when I hit the house next week (I may even make it for breakfast).

There are a couple more recipes that are family favorites: Sheet Pan Sticky Sweet and Sour Chicken and Simple Baked Cheesy Italian Chicken Meatballs.

If it isn’t clear, pretty much every recipe I have tried from Half Baked Harvest has been a success. If you have the time, it is really a pleasure to sit and browse through all of the recipes on the blog to discover a few new dishes to add to your rotation (just don’t do it on an empty stomach).

Retro Style Chocolate Sheet Cake from Half Baked Harvest

While Tieghan’s recipes for main dishes are amazing, her dessert recipes are also marvelous. This Retro-Style Chocolate Sheet Cake popped up while I was finishing up this post, and right after I ran to the kitchen to make it, I came right back to my computer to add it to this post. It is so good that I may have to make one for my kids now.
