Weight Watchers Cottage Cheese Waffles

2 Tbsp fat free cottage cheese
2 large eggs
1/4 tsp garlic powder
1 pinch dried oregano
1 pinch kosher salt
1 pinch black pepper
cooking spray
4 Tbsp light cheddar cheese

  1. In a small blender, puree the cottage cheese until smooth. Add the eggs, garlic powder, oregano, salt, and pepper. Blend until well mixed.
  2. Lightly coat plates of mini waffle maker with the cooking spray. Add 1 tbsp of cheese to bottom plate. Spoon half of egg mixture into waffle maker. Top with another 1 tbsp of cheese. Close waffle maker and cook 2 to 4 minutes, until the top lifts easily. Transfer waffle to a plate.
  3. Repeat with remaining ingredients.
