Weight Watchers Cottage Cheese Waffles
2 Tbsp fat free cottage cheese
2 large eggs
1/4 tsp garlic powder
1 pinch dried oregano
1 pinch kosher salt
1 pinch black pepper
cooking spray
4 Tbsp light cheddar cheese
- In a small blender, puree the cottage cheese until smooth. Add the eggs, garlic powder, oregano, salt, and pepper. Blend until well mixed.
- Lightly coat plates of mini waffle maker with the cooking spray. Add 1 tbsp of cheese to bottom plate. Spoon half of egg mixture into waffle maker. Top with another 1 tbsp of cheese. Close waffle maker and cook 2 to 4 minutes, until the top lifts easily. Transfer waffle to a plate.
- Repeat with remaining ingredients.
