Weight Watchers Chocolate-PB Microwave Mug Cake

1/4 cup plain fat free Greek yogurt
1 large egg
3 1/3 Tbsp powdered peanut butter
1 Tbsp monk fruit sweetener with erythritol
2 1/2 tsp unsweetened dark cocoa powder or regular cocoa powder
1/2 tsp baking powder
- In a medium bowl, whisk together the yogurt and egg until smooth. Stir in the powdered peanut butter, monk fruit sweetener, cocoa powder, and baking powder until well combined.
- Coat a 10- to 12-oz microwave-safe mug with cooking spray and spoon the batter into the mug. Microwave on High until the cake rises to the top and is cooked through, 1 to 1½ minutes. Serve immediately.
