Now that the weather is officially, consistently cold, #MeatlessMonday is all about warming soups, stews, and curries like this Green Coconut Curry with Chickpeas and Bean at Dagmar’s Kitchen (above & top). If you’re nervous that green curry is too much for your little one, don’t worry: Sonja has tips for how to serve this to picky eaters. So helpful!
I’m taking some leeway with #TacoTuesday and going with these Beef Fajitas (with a cilantro lime marinade) at What’s Gaby Cooking. I mention the marinade specifically because that’s the secret to these — and really, any — great fajitas. So make sure to plan ahead. I’m loving my new food blog discovery, What to Cook Today, and this recipe for Saucy Curry Shrimp Chow Mein is a perfect example of why. The quick, one bowl meal, which has shrimp, veggies, and noodles, comes with directions on how you can make this in an Instant Pot, skillet, or wok. In other words, it’s weeknight gold.

I recently started a new series on YouTube called Dinner in Five with my fastest, freshest recipes yet, using only five ingredients not including fat, salt, and pepper. This week, I served up Sticky Sheet Pan Chicken made with a Sriracha, a power ingredient that lends big flavor with little else needed. Watch how I whip up this fast weeknight dinner and get the full recipe in the description under the video. Oh, and don’t be scared by Sriracha: this isn’t spicy. That is, unless you want it to be, in which case up the amount by double or maybe even triple! Yum.
If this One-Pan Cheesy Spaghetti Pie at Half Baked Harvest doesn’t scream Friday night, I don’t know what does. I don’t know what makes me love this recipes more: that it cooks in one pan, that it’s pasta, all that cheese. Let’s just say that I’m in love and I know that my kids will be too.
