During the winter, Meatless Monday doesn’t mean you have to give up on comfort food. This Eggplant Parmesan recipe at The Cozy Cook is rich and satisfying…and full of veggies. Just, don’t tell the kids. Go light on the cheese if you’re counting calories.
Change up your routine this Taco Tuesday. This total meal takes just 30 minutes, but the Sweet & Tangy Steak Tacos at Proportional Plate feel like they’re from a swanky taco shop. You could sub in fish or chicken for a lighter take.
Smothered in tangy, creamy goodness, these Dijon Pork Chops at Diethood are a cozy comfort meal on a cold winter night. Plus, they’re low-carb and take just 30 minutes, so they’re basically the perfect dish.
My family loves taco soup, but this Chicken Enchilada Soup at Dinner at the Zoo is a nice change from our normal ground beef recipe. That said, you could totally sub in ground beef or even chickpeas or pulled jackfruit in place of the chicken, if you don’t have any on hand. (Or, grab a rotisserie — our favorite dinner hack.)
Cristie over at Little Big H recommends serving this One-pan spiced chicken with tomatoes with crusty bread or polenta, which sounds amazing. But she also mentions that her toddler’s favorite way to eat this is over rice, so that the rich tomato sauce can seep down into it and give it tons of flavor. Sounds like a winner to me.
My kids and I love baking as a fun indoor activity when it’s too yucky to go outside. These Chocolate chunk oatmeal cookies at Loody’s Kitchen are enough to cheer me up on a soggy afternoon indoors again.
