Weight Watchers Cottage Cheese Blender Pancakes

1 cup uncooked old fashioned rolled oats
2 tsp baking powder
1/4 tsp table salt
1 cup fat free cottage cheese
2 Tbsp fat free skim milk
1 tsp vanilla extract
2 medium bananas, sliced and divided
1 large egg
2 cups strawberries, sliced
- Place the oats, baking powder, and salt in a blender; blend on high until the mixture looks like whole-wheat flour, about 30 seconds. Add the cottage cheese, milk, vanilla, 1 banana, and egg. Blend on high speed until smooth, 15 to 30 seconds.
- Coat a nonstick griddle or large nonstick skillet with cooking spray. Heat the griddle or pan over medium heat. Scoop a scant ¼ cup of batter per pancake onto the griddle or skillet; cook until the tops of the pancakes are covered with bubbles, 2 to 3 minutes. Flip the pancakes over and cook until browned on the bottom, 2 to 3 minutes. Repeat the process with the remaining batter.
- Meanwhile, in a medium bowl, combine the remaining banana and strawberries. Top the pancakes with the berry mixture.
