Monday can hit hard, so I like to fight back with easy recipes that pack a healthy punch. So this week on #MeatlessMonday, I’ll be loading up the crock pot with the ingredients for this easy Vegan Lentil Chili at Peas and Crayons. It’s as close to no-work as possible, and if I throw some sweet corn bread on the table (I make Jiffy out of a box — don’t judge), it’s that much better.

I’ve been eyeing this Chicken Schnitzel Wrap from the Alimentari cookbook (and online at Cooked) by Linda and Paul Jones for a few weeks now, and it’s going on our menu for Tuesday night. I mean, melty cheese and thin slices of chicken schnitzel in a pita wrap — you can’t get better. If you still have leftover turkey, use that instead of chicken. Add a side salad or even just some raw veggies with ranch, and you’ve got a yummy meal.
Another favorite around our house are these Barbacoa Beef Tacos at La Creme de la Crumb. I love them because they’re so easy to make (slow cooker for the win — again), and the rest of my family loves how tender and tasty the tacos are. Plus, depending on the size of the roast you use, these can make great leftovers for lunch or even another dinner. Taco bowls later this week, maybe?

I loaded up on drumsticks that were on sale at my grocery this week, but even at full price they’re a very affordable way to make dinner. Start this recipe for sweet and tangy Huli Huli Chicken at African Bites on Wednesday night, because the longer those drumsticks sit in the marinade, the better they’ll taste. Then all you have to do on Thursday is cook some rice and grill pineapple while the chicken bakes.
Friday night is movie night at my house, and that usually means pizza or some other cheesy-carby indulgence. This week, I’m going over-the-top delicious with this 5-cheese White Pizza Grilled Cheese sandwich recipe at The Gracious Wife, because whoa. Add a pot of homemade tomato basil soup like this recipe at Valentina’s Corner’s (or canned, which is totally fine too), and this is a perfect cold winter evening meal.
