This fresh, light Thai Peanut Chicken Noodle Bowl at Modern Crumb is a great dinner for a busy weeknight. You can prep it ahead of time and take it to baseball practice or eat it on a warm night on your back porch. And if you’re trying to eat less meat, you could easily swap chickpeas or tofu for the chicken in this recipe.
Our family has started putting meatball subs in our dinner rotation, and these Meatball Subs at Aimee Mars take it up a notch with that pesto and jalapeño topping. If you don’t want to take the time make your own meatballs, you could always buy store-bought for a quicker meal — and you can even find great meatless meatballs in the frozen section of your grocery..
This creamy comfort-food dinner is a great option for Meatless Monday…or just any day of the week. It’s a One Pot Creamy Tomato Gnocchi at Fork in the Kitchen, and it’s so rich and filling. I’d serve it with a side salad or some veggies to make it not too heavy.

Taco night can get a little boring around our house, but mixing up a big bowl of this Black Bean Salsa at Peas & Crayons can really dress it up. That said, I’d probably eat the whole bowl with some tortilla chips before I even get around to making the tacos.
Pack up a batch of these Easiest Chicken Salad sandwiches at Sarah J. Hauser for a casual picnic dinner at the park. You can serve the chicken salad over greens, with some pasta salad on the side, or on croissants like this mouth-watering photo. When we were kids, my mom always served chicken salad with brownies that had a layer of mint icing on top. I may have to bring that tradition back.
With berries starting to come in season around here, I’m craving this Lemon Cake with Fresh Berries at Wife Mama Foodie. It’s just the right balance of rich, moist lemon cake with fresh fruit and the perfectly light whipped coconut cream. I’m now looking for an excuse to have a dinner party this weekend.
