And before you decide you can’t give it a try because slow cooked and garlic confit, let’s talk. Prepping both is a totally hands-off, make-ahead affair that’s worth every minute of planning (which is just a few). If you just cannot, though, crank the heat on the tomatoes and roast them quickly — I’d say about 25 minutes at 425 — and skip the garlic confit all together. It’ll be too bad, but still yield a ridiculously tasty summer meal that’s way better than any jarred sauce situation.
