Grilled Halloumi and Peach Kebabs | My New Roots
Monday is Memorial Day, but that doesn’t mean that we have to give up #MeatlessMonday. Caroline recently rounded up tons of great vegetarian cookout ideas that even meat lovers will love with plenty of options to choose from (hint: no lame veggie burgers allowed). I personally have my eyes on the Grilled Halloumi and Peach Kebabs at My New Roots, which look like start-of-summer perfection.
This Easy Sheet-Pan Lemon Harissa Baked Shrimp at Bright Roots Kitchen preps in about ten minutes and cooks in seven, making it a weeknight lifesaver. I love that Ashley doesn’t rely solely on harissa for flavor, but also doesn’t make this overcomplicated. In fact, it’s pretty easy and flexible. Don’t have basil? Use mint. Cinnamon too sweet for you? Try allspice. And instead of zucchini, Ashley gives other veggie options that work as well.
Oh, and don’t be scared of harissa. The Moroccan pepper condiment is growing in popularity and can now be found both spicy and mild in many mainstream markets and at Trader Joe’s too.
I have a confession: I gave up on zoodles because I got tired of making them. And honestly, my sauces kept getting watery too. Even when the kids manned the spiralizer, they just never felt worth the effort. But now that zucchini noodles are easy to grab pre-made at the market and I’ve found this recipe for Chicken Zucchini Noodle Pad Thai with a how-to video at White on Rice Couple, a trusted source, I’m ready to jump back in. I have a feeling that these will come out right, with minimal effort and maximum flavor.
