No-bake cookies are the way to go if you’e craving sweets in the summer but don’t want to turn on the oven. Which I don’t, unless I absolutely have to. And yet, most no-bake cookies require melting ingredients over the stovetop, which is still too much heat in the kitchen for me.

So I tracked down 7 truly no-bake, no-bake cookie recipes that don’t earn the title on a technicality. As in, these recipes don’t require an oven or a stove and still yield lots of deliciousness. Enjoy!

Gluten-free, nut-free, and vegan Coconut Snowballs from Emily Han for The Kitchn check a lot of boxes for people with allergies or restricted diets. And they can be made in about 15 minutes, which makes them a cool no-bake cookie choice for anyone.

I like my sweets with a little crunch and some salt, so Real Simple had me at “crushed pretzels.” With only five ingredients, these No-Bake Almond Butter Thumbprints by Pam Lolley are about as simple as it gets!

The food processor is the only appliance you’ll need to make the Coconut Lime Drop Cookies from Real Simple. They look light and refreshing, which is everything I want in a dessert right  now.

More good news for restricted diet indulgences: Veggie Balance’s healthy No-Bake Peanut Butter Cookies are gluten-free, dairy-free, low-sugar, and vegetarian. (But obviously not for those with peanut allergies.) Cocoa powder gives them a delicious chocolatey taste, but feel free to drizzle with more chocolate to take it up a notch. I totally would.

Bourbon Balls are a southern favorite, and most of these recipes involve mixing and rolling rather than baking. Southern Living’s No-Bake Bourbon Balls use cocoa powder instead of melted chocolate, which means you can do your stirring in a bowl — no heat source required for melting the chocolate. Yes!

Icebox cake is a summer favorite for a lot of families so I love finding a no-bake cookie adaptation. These Chocolate Wafer Icebox Stacks by Nealey Dozier allow for endless variations, based on your personal cookie preference, and I’m one hundred percent here for it!
