For #MeatlessMonday, we’ll be trying this vegan chili recipe at Nourishing Amy that uses sunflower mince to recreate the texture of ground beef. If that’s not available at your supermarket, you can just leave it out or just go ahead and use ground beef for a regular chili with great spice flavors.

I love the ease of a good sheet pan dinner, because it makes clean-up so much easier. This sheet pan balsamic salmon with roasted tomatoes at Sarah J. Hauser is packed with flavor. Of course, if your kids prefer their salmon without the glaze (or, let’s be honest, they just prefer chicken) you can make those tweaks with this recipe too.

I loved this Instant Pot Chicken Ragu at Girl Gone Gourmet, which Caroline featured in a recent roundup of classic dinners made easier with an Instant Pot. Because throwing all the ingredients into the pot, then having it ready in just a few minutes is a game-changer around my busy house at dinnertime. I know I’m not alone!
We love this Turkey Grilled Cheese sandwich recipe over at Well Plated, which I’ve featured here before, as one of my favorite meals you can easily take on the go to eat before your kids’ after-school practices or rehearsals. Then again, you can always whip them up and serve right at home for a comfy night in. Bonus: add a bowl of tomato soup.

The cool weather is starting to finally hit, even down south where I live, and a warm comfort-food dinner like this Baked Chicken Parmigiana at A Simple Palate is just what I’m craving. It’s rich and cheesy and easy, which sounds like a perfect Friday night dinner to me.
