My family loves taco soup, but this Chicken Enchilada Soup at Dinner at the Zoo is a nice change from our normal ground beef recipe. That said, you could totally sub in ground beef or even chickpeas or pulled jackfruit in place of the chicken, if you don’t have any on hand. (Or, grab a rotisserie — our favorite dinner hack.)
Cristie over at Little Big H recommends serving this One-pan spiced chicken with tomatoes with crusty bread or polenta, which sounds amazing. But she also mentions that her toddler’s favorite way to eat this is over rice, so that the rich tomato sauce can seep down into it and give it tons of flavor. Sounds like a winner to me.
It’s been raining non-stop down here in Nashville, so my kids and I are turning to baking as a fun indoor activity other than screens. Because, OMG just stop raining! These Chocolate chunk oatmeal cookies at Loody’s Kitchen, however, are enough to cheer me up on a soggy afternoon indoors again.
