When we reach that point in summer when it’s crazy hot — you know, like now — it’s hard not to crave frozen everything. And by frozen everything I mean ice cream everything. It’s a problem, which is why I’ve gone on a mission to amass as many easy, healthier alternatives as possible.

These frozen chocolate covered bananas are on the top of my help-me-so-that-I-don’t-eat-all-the-ice-cream treats list because they are delicious, satisfying, and cool you down with way less sugar and fat. Oh, and the kids love them too.

In fact, the kids don’t just love eating them, they love helping make them. We melt the chocolate and coconut oil together, I manage the topping options — because you can imagine what they’d end up being if the boys were in charge alone — and they do the rest.

I also love that you can easily control the portion size of this snack. Sometimes, instead of using a whole banana, I’ll cut the banana into pieces to make small bites.

However you serve these — big or small, plain or smothered in crazy toppings — they are a fun and tasty way to cool down with something sweet but not overly sugary.

And remember: You can always make these vegan by using non-dairy chocolate chips. I love Enjoy Life Chocolate Chips, which taste just like Toll House, but are dairy-free (and available at our affiliate Amazon).

 

Frozen Chocolate Covered Bananas recipe at Cool Mom Eats: A healthy, but sweet summer snack for the kids -- and grown ups too.

Frozen Chocolate Covered Bananas

Serves 4

4 bananas (ripe, but not overly soft)
1 cup chocolate chips (regular or vegan)
1 teaspoon coconut oil (refined or unrefined, which will lend a slight coconut flavor)
Toppings of choice
Popsicle sticks

1. Line a baking sheet that fits in the freezer with parchment paper. Peel bananas and prep with popsicle sticks; set aside.

2. Place chocolate chips and coconut oil in a double-boiler or microwave-safe bowl and melt. If using the microwave, start with 25-30 seconds on high, stir, and then continue in 10-12 second intervals, stirring between each one until the chocolate is fully melted.

3. Dip the bananas in the melted chocolate, followed by toppings of choice. Place on parchment and pop in the freezer for several hours or overnight before serving.
