If you ask me, the easiest way to go vegan on #MeatlessMonday is to make a recipe that includes the word burrito. Mexican flavors, avocado, and salsa make nearly anything an easy sell in my house. If the same is true in yours, these Instant Pot Vegan Quinoa Burrito Bowls at Detoxinista will be a win. And hey, if vegan isn’t your thing, top these with some shredded pepper jack cheese and sour cream too. Yum.
I love this recipe for Mama’s Puerto Rican Chicken and Rice (Arroz con Pollo) at Ambitious Kitchen. It’s a perfect example of how healthy ingredients can come together to create bold flavor. While the recipe cooks fairly quickly, you should note that there is a lot of spice measuring (easy, but will take a few minutes) and you’ll have to chop garlic, pepper, onion, and cilantro (also fairly easy, but perhaps more time consuming than you’d expect if you’re slow in the kitchen or have a dull knife).
Pro tip: To help cut down on prep time tonight, cut extra peppers and onions for this recipe while you’re cutting them for the burrito bowls on Monday night.

Simple, healthy, and quick to pull together, you can even make the salmon ahead of time. The recipe calls for canned beets, but I find the ones that are vacuumed sealed even tastier and easy to find these days. Some even come infused with flavor.
