For a #MeatlessMonday meal the whole family will like (as in, they probably won’t realize it’s meatless), try these Black Bean Enchiladas at Family Food on the Table. They’re hearty and cheesy and full of protein without the beef.
I’d make this Mediterranean Greek sheet pan chicken at Spices in my DNA (because, sheet pan dinners, yay!) one night, and then follow up later this week with a Greek salad using the leftover chicken over greens with some sun-dried tomatoes and feta cheese.
If you have any leftover chicken from the sheet pan dinner, you can sub it for the turkey in this Turkey Tetrazzini recipe at This Is How I Cook. And if you don’t, just grab a rotisserie chicken on the way home. Couldn’t be easier.

For a simple low-carb meal with tons of flavor, this sausage and peppers recipe at Another Tablespoon is a family favorite. Make extra, then add it to cajun rice with diced tomatoes later in the week for a quick and easy jambalaya. Tip: Since my husband is a vegan, we sub in Gardein’s Vegan Italian Saus’age (available through our affiliate Amazon at your local shop) in recipes that call for real sausage, and it’s really good.
I’ve been needing some good slow cooker (or Instant Pot) recipes for those nights when we get home late from a basketball game for the kids, and this loaded slow cooker chili at Kitschen Cat looks great. If you’re wanting a vegetarian version, you can easily just leave out the meat. And since it makes 12-15 servings, it’s no problem if they decide to bring a friend home after the game.
