So, we’ve found 5 easy meals with loads of veggies that we think our kids will actually eat. Fingers crossed!

I’m starting to see some spring veggies at the grocery store, and it has me craving this Pasta Primavera at Cooking Classy. It’s loaded with vegetables, so even though it has some carbs…it’s not too much. But it’s still enough for my kids to be happy with it. Of course, you could add rotisserie chicken or grilled fish on the side for a little extra protein.
A huge, full-of-ingredients salad like this Corn, Tomato, Avocado & Chickpea Salad at Halfbaked Harvest isn’t as scary as you might think for picky kids. Just use our tried-and-true hack of plating their ingredients separately, rather than all mixed together. Add a little dipping sauce (and maybe some pulled rotisserie chicken) and you have an easy, kid-friendly dinner that still makes us parents happy too.
Stir Fry is always a favorite with my kids, and it’s such an easy way to add veggies to our plates. This Chicken Stir Fry at The Seasoned Mom is about as kid-friendly as they come…but then again, you can sub in their favorite green veggie if they hate broccoli.

I use a lot of jackfruit as an option for chicken or pork at our house. This Korean BBQ jackfruit sliders at Killing Thyme is great for a weekend dinner with friends, and that mixed veggie slaw is a bright and colorful way to add some extra veggies for the kids.
We’re huge fans of breakfast for dinner, but it can be a hard meal to add veggies to. Our solution: smoothies! Pack them with spinach, kale, carrots, avocados and you get tons of nutrients that basically tastes like dessert. I love this Glorious Green Smoothie recipe at Gathering Dreams, which gives you so many ideas for variations. Serve them up with your eggs and bacon, and you’ll have some happy campers. Whoo!
