What started as a Tumblr page in 2011 (no, really) has since grown into a beloved recipe resource for millions of people. Her recipes are focused on showcasing “quick and easy meals for the everyday home cook to show you that it really doesn’t take much to make a homemade meal completely from scratch.” You can find her delicious recipes on her blog of course, and also on Facebook, Instagram, and Pinterest. While every single recipe I have ever tried from Damn Delicious has turned out pretty much perfect, below are a few of my family’s favorites that are on repeat around here. All the way back in 2016, Kate shared this recipe for BBQ Chicken Salad in a round-up of Kid Friendly Salad Recipes and it is the most requested salad for DIY dinner night from my teens. I usually use rotisserie chicken for this salad, but you could make it vegetarian by using bbq jackfruit.

Instant Pot Cheeseburger Mac n Cheese from Damn Delicious

And finally, this recipe for Instant Pot Cheeseburger Mac n Cheese is my 18yo son’s most-requested meal during the week. He can nearly eat an entire pot after a late-night practice. This is not the “hamburger helper” you remember. It’s soooo much better. The last time I made this, I used ground Beyond Beef and no one even noticed, so I have worked it into our #MeatlessMonday rotation.
