For Meatless Monday, we’ll be trying these Greek Chickpea Burgers at Connoisseurus Veg. (Awesome name, right?) Chickpeas are a great substitute for chicken or turkey when making plant-based meals, and they will work perfectly with the Greek spices in this recipe. I’m predicting no leftovers on these.

Everyone loves breakfast for dinner and this week, instead of pancakes or waffles, I plan on making a slightly more sophisticated Quiche Lorraine. This recipe from Life, Love and Good Food can be prepped ahead of time (yay for make-ahead recipes!) whenever I find a little time during my week; then keep in the refrigerator until you’re ready to bake. Serve it with a nice green salad, until sliced cantaloupe is back in season. Because that’s my kids’ favorite.
