Ah, breakfast for dinner. I love it because it’s easy. My kids love it because, well, breakfast for dinner. My husband, however, hates when he sees those three words on our weekly menu because he assumes that breakfast for dinner means plain pancakes and cereal. I admit that sometimes that is what it means, but not always.
There are all kinds of breakfast recipes that keep it simple, are packed with protein and veggies, and are downright delectable. Plus, many breakfast dishes make it easy to use up leftovers and random ingredients that would otherwise go bad in the fridge. These breakfast for dinner recipes give you all the convenience and fun of those plain pancakes, while giving dinner a nutritional run for its money—making everyone, even my husband, happy.

This recipe for Vegetarian Chili Tot Breakfast Bowls at Peas and Crayons is a genius way to serve breakfast for dinner. It’s a hearty meal that uses up any leftover chili (or meat sauce or beans) you may have tucked in the fridge. You can even use rinsed and drained canned black beans in a pinch. Plus, frozen tater tots give you that hash brown flavor without the work. Simple and delish.

Quiche is probably my favorite breakfast for dinner option. Keep a store bought pie crust in the freezer and dinner is always easy to throw together. Just whisk eggs with whatever ingredients you have on hand and you’re done! I always have ground beef in the freezer, but never remember to pick up hamburger buns at the market.
