The Chickpea Shwarma Sandwich that we found at Minimalist Baker has become a favorite weeknight dinner in my house, so I’m happy to have found a similar meal in these Chorizo-Spiced Chickpea Fajita Pitas at Vegetarian Ventures (pictured). These look fresh, easy and full of kid-approved flavor. In fact, to keep with the theme, I might even serve these with tortillas instead of pitas for #MeatlessMondays.

I love how a clever cooking method and a little prosciutto turn frozen tortellini and peas into a pretty sophisticated dinner—at least by weeknight standards. Deb at Smitten Kitchen tops her Crispy Tortellini with Peas and Prosciutto with a dollop of creme fraiche, but regular sour cream or even a pat of butter will do just fine too. One quick note: Her recipe is for 2 people, so be mindful of increasing amounts if you’re feeding more people.

You might normally think that a recipe the requires 15 minutes of marinade time is not for you, at least not during the week. But it is when putting the marinade together takes 5 minutes and cooking only takes 7. It turns out, the arithmetic of this recipe for Asian Salmon Kabobs at Damn Delicious works in your favor—even on Thursday night.
We love Jaden at Steamy Kitchen and have relied on her recipes for years, so I’m pretty stoked that she shared one that she loves from my very own cookbook, Make It Easy. Because if Jaden says a recipe works and is tasty, well then, it is. It just so happens that these Thai Chicken Burgers with Quick Pickled Carrots are also my favorite recipe in the book. The carrots pickle in the time that it takes to make the burgers, which are always a fun way to end the week.
