Tieghan’s recipes at Halfbaked Harvest are always bursting with flavor, and this Jammy Cherry Tomato Pasta with Crisp Lemon Rosemary Chickpeas is no exception. I mean, the tomatoes literally burst! But in addition to being delicious, I love that this is a pretty kid-friendly dinner, considering you can basically just serve them the noodles and tomatoes and they still have a filling, tasty meal.
Give your #TacoTuesday a twist with this Grilled Mexican Corn Pasta Salad at Oh Sweet Basil. It’s inspired by elote, the Mexican street food we’re obsessed with, but turns it into a one-bowl dinner. The ingredients list is long, but if you cook Mexican food a lot you probably already have most of this on hand. And you can’t beat feeding 8 people in less than 30 minutes. Whoo!
I have lots of carrots coming up in my backyard garden right now, and I’m finding it hard to get inspired to use them other than snacking. But when I found this Summer Creamy Vegetable Soup at Healthy Nibbles, I knew it was a great way to use those carrots. Note: It takes a while to cook down the veggies and blend them, so plan this for one of those last, lazy summer nights before school starts back. I’d serve grilled cheese on the side, for a heartier meal.
So, let’s talk eggplant. It’s in season right now, but I wouldn’t rank it among my kids’ favorite foods. But I do think that it’s worth asking them to try new things, and the easiest way for me to get them to do that is, of course, to fry it. This recipe for Eggplant Parmigiana at No Plate Like Home has you take the step to fry up thin disks of eggplant, then cover it in a savory, meaty sauce. I think it’s a great first eggplant dish for kids.
You can stuff these Chipotle Chicken Skewers at Keto Diet full of all the fresh peppers we’re seeing at farmer’s market right now. This is a low-carb, paleo, and keto meal, and if you switched out tofu for the chicken you could make it vegan too. Plus, it’s served on a stick, which makes it a kid-favorite at our house. That’s a win all around.
Use up all that in-season fruit in this yummy Stone fruit, Blueberry & Frangipane Galette at Seasons in Vermont. It’s a perfect dessert to bring to a cookout, or just to celebrate the weekend finally being here. While it looks impressive, it’s actually not that hard to bake — we think your kids would even enjoy making it with you.
