During the back-to-school season, the conversation seems to always veer towards school lunch, but honestly, in my house, breakfasts are just as stressful! Sometimes it seems impossible to successfully move the kids away from sugary, processed cereals and breakfast bars when we’re all rushing around — and they are just so convenient. So I gave it a little thought and came up with a make-ahead, grab-and-go breakfast that changed our lives: Baked Oatmeal Bites.
If you think I’m exaggerating about how much I love these, think again: I even went on national television to share the recipe. Because they are that good and, more importantly, they make the difference between my kids starting their day with a sugar bomb or getting a healthy start.
And I’d say that’s pretty life changing.
