The same Instant Pot that has been helping me master weeknight dinners has now become my favorite A.M. tool too. Because it turns out that there are loads of great Instant Pot breakfast recipes that you can make once — with hardly any effort — and reheat through your busy weekday mornings.
Go ahead and hit that snooze button (or, more realistically, just linger over coffee longer): You can do it and still serve a healthy breakfast. Perfection.

One of my gluten-free friends sold me on the whole quinoa-as-a-breakfast-food thing, and now that I’ve tried it, I’m never going back. Quinoa packs in tons of protein and retains its texture so much better than other grains that get gummy on a reheat, like oatmeal. My sister made me a big batch of steel cut oats right when I was postpartum and half-blind with exhaustion, and it really gave me the energy boost I needed to power through. Steel cut oats do get a little more solid as the week goes by, but you can always add a little milk to your bowl, or just slice and eat with a fork like I do.
