This Korean Chile-Braised Brisket at NPR is from one of our favorite family cookbooks of 2017, Dinner in an Instant by Melissa Clark. The recipe is designed for an Instant Pot — so other than the marinade time, it cooks fairly quickly and with very little hands-on effort — but there are also slow cooker directions. Either way, serve this with her Kimchi Coleslaw (recipe also provided) or just a big side salad.

I know, I know. We’ve already had pasta this week, and while I wouldn’t normally plan for two pasta meals in one week, it is officially the DEAD OF WINTER. So I say go for it.
