Cool Mom Eats weekly meal plan: Steak in Salsa Verde at Mexico in My Kitchen

Caroline linked to a bunch of Mely’s recipes in her post on what Cinco de Mayo really means to some of her favorite Mexican food bloggers, and they roped me in. Once on Mely’s site, Mexico in My Kitchen, I could hardly decide which recipe I wanted to make first. This one, though, for Steak in Green Sauce, stood out to me because it’s so easy and looks incredibly flavorful. How perfect would this be with a side of rice (or maybe just warmed tortillas if you’re in a rush) and a sliced avocado salad? Delicious.

Be sure to read all of Mely’s post: She gives suggestions if you can’t find fresh tomatillos.

This recipe at Pinch of Yum preps in only 10 minutes and cooks up in 30, making it perfect for a quick, end of week meal paired with a big salad.
