One of my very favorite food bloggers is Lindsay Ostrom at Pinch of Yum. I have been following her site for many, many years and in true internet fashion, I consider her a friend although I have never actually met her in person. Her site is bookmarked on my computer as I am weekly, and sometimes daily, leaning on her website to help me get a healthy, delicious meal on the table quickly.
Below are a few of my family’s favorite recipes that are on repeat around here – but do take some time and browse the entire blog and search for recipes that fit your likes/dislikes. And be sure to follow her Instagram and Pinterest pages for more inspiration.

This recipe for Pineapple Pork with Coconut Rice is a weeknight savior that only requires five ingredients. This meal is perfect fuel for kiddos who have weeknight sporting events and can easily be made vegetarian by subbing tofu for the pork. You can also eliminate the jalapeño to reduce the spice. You may consider doubling this recipe because the leftovers are delicious and make a great after-school snack or lunch later in the week.

If you are like me and trying to work more #MeatlessMonday into your meal plans, you will want to add this Vegetarian Shepard’s Pie to your repertoire. It is quite delicious, and no one misses the meat. It takes about an hour from start to finish, so I like to put it all together earlier in the day and then just bake for 15-20 minutes in the evening. To make it vegan, use olive oil in place of butter and non-dairy milk of your choice in place of the yogurt.

DIY dinner night is always a winner with my family, and it’s even better when it’s cooked on a sheet pan. My kids absolutely love these Sheet Pan Chicken Pitas with Tzatziki. I discovered these Easy Crockpot Carnitas at Pinch of Yum a few years ago when I needed to make a meal to take to a friend who just had a baby. They are so so so good that it is now on a bi-weekly rotation in my kitchen. I typically double the recipe and make a huge batch to use in lunches and freeze some for a quick last-minute dinner (carnitas nachos ftw). If you are taking these as a meal to someone, just provide all the taco fixings and then let them throw the meat in the broiler right before eating so it has those nice crispy edges.

Say hello to my favorite 15-minute meal: 15-minute Egg Roll in a Bowl from Pinch of Yum. This recipe is a life-saver and a crowd-pleaser. I love that you can use up whatever veggies you may have in your crisper and sub ground chicken or turkey for the pork. This is a recipe you will want to keep in your back pocket for those incredibly busy nights, and actually comes together faster than ordering takeout.
