We’re starting the week off with a #MeatlessMonday meal that’s hearty, but light — because you know what’s coming — and easy to prep ahead. You can also adapt these Sweet Potato Taco Bowls at Chelsea’s Messy Apron to use whatever you have on hand, that way you don’t have to go out of your way to grab specific ingredients. We image there will already be enough of that this week.
These Fish Sandwiches — a 15-minute meal from Jamie Oliver — are perfect for Thanksgiving week: they’re light, kid-friendly, easy to make, and super quick. If you don’t like mushy peas, skip that part and the recipe is even easier! But, if you ask me, having the veg built in to an already quick and easy recipe sounds like a huge relief.
The night before Thanksgiving calls for hot dogs! Yup, I’m going there. They may not be the healthiest counterbalance to the next day’s meal, but they’re fun and crazy easy, especially if you have family in town and are feeding a crowd. I’m loving these Dogos at Chicano Eats, a recipe that snazzes up hot dogs without a whole lot of extra work. Perfect for feeding your crew the night before a big cooking day.
Turkey, Brie and Cranberry Panini | Just a Little Bit of Bacon
So, no dinner for Thursday, but on Friday it’s all about the leftovers.
