Weekly meal plan: Greek Pita sandwiches at College Housewife

For meatless Monday, I’m going to make these Greek Chicken Pita Wraps at College Housewife. I know, I know…chicken is meat. But I’ll probably whip mine up with tofu or chickpeas (or maybe some meatless chicken strips from the frozen section) instead. Either way, these are one of my kids’ favorite meals.

Weekly meal plan: Mexican salads at Sweet & Savory

For a lighter take on Taco Tuesday, I’m looking at this Mexican Salad at Sweet and Savory Meals. It’s packed with all my favorite flavors, like avocados, red beans and cilantro. Of course, you can serve it alongside tacos too, if you want.

Weekly meal plan: Orange Chicken with Stir Fry veggies at Bless this Mess

Instead of ordering in, whip up this Orange Chicken with Stir Fry Veggies at Bless This Mess instead. Cook time is just 25 minutes, which is probably faster than waiting for delivery anyway.

Weekly meal plan: Chicken Carbonara at Sweet & Savory Meals

Chicken Carbonara can be pretty indulgent, what with all that heavy cream and egg yolks, but with a few salads on the schedule this week I think we can splurge on it. I love this recipe at Sweet and Savory because she gives a few variations, including shrimp, bacon, and more- or less-creamy sauce.

Weekly Meal Plan: Romaine Salad at Mean Green Chef

These Romaine Blue Cheese wedge salads at Mean Green Chef look amazing and they take just 15 minutes to prep. They’d be the perfect side dish if you’re grilling out, or they could stand on their own as a lighter dinner. You might just have to pop a pizza in the oven for the kids.

Weekly meal plan: Dark Chocolate and Peanut Butter Brownies at Mackenzie Jordan

We’re drooling over these dark chocolate and peanut butter swirl brownies at Mackenzie Jordan. I’m assuming you can see why.
