The Tomato, Olive, and Chickpea Quesadillas with Dill Yogurt Dip at Cookie + Kate are a fabulous spin on traditional Mexican quesadillas using Greek flavors. So, yea, as a Greek girl, I’m sold. If your family loves Greek food and the flavors in a simple Greek salad, they’ll love this too. It’s a perfect quick #MeatlessMonday meal.

These BBQ Chicken Tacos at Lovely Little Kitchen made it to the top of our list of easy dinners using a store-bought rotisserie chicken because they look delicious for the whole family and, well, we’re a sucker for any no-cook dinner that’s this tasty and well-balanced. Grab a roast bird, thaw some frozen corn, open a can of black beans and dinner’s practically done.
Most family cooks who try to incorporate seafood into their weekly menu end up falling back on salmon and shrimp. Though with good reason—they’re both easy to cook—there are other easy fish dishes, as well, including this Egg Batter Pan-Fried Flounder at The New York Times. The recipe calls for green garlic, but regular garlic will turn out just as well. And the whole thing cooks up in about 20 minutes.

We are so down with the one-pot pasta trend and may have found the holy-grail of all one-pot recipes in this One Pot Pizza Pasta Bake at Damn Delicious—or at least our kids think so. Italian sausage, tomato sauce, pasta, cheese and pepperoni on top, plus an easy clean up. I dare you not to make this weekly.
With a version of pizza already done this week, we’re going with burgers on Friday. The Turkey-Spinach Sliders at Bon Appetit are clever because—ta da!—veggies are in there. It’s not like the spinach is invisible, but it’s certainly harder to fight when packaged in a juicy burger with the fixin’s.
