I started the new year wanting to make some healthy changes just like everyone else, but I have to confess, this freakishly cold weather (what the heck is a bomb cyclone, anyway?!) has me craving beer cheese soup and chili like there’s no tomorrow. Or at least no future scenario that involves me swapping drawstring PJs for real pants.
So I’ve rounded up some skinny Instant Pot recipes that will keep you — and me — on track with our New Year’s resolutions. We can throw everything into the IP, know that something hearty and satisfying will come out, and return to the warm folds of the couch as soon as possible. Because brr.

Something made primarily with beans has no business looking this gorgeous, but Amanda at Heartbeet Kitchen has outdone herself and I’m all in for her Instant Pot White Bean Soup. I love that she borrows tahini, a Middle Eastern staple (and the stuff that makes hummus taste so good), to add some richness. Yum.
I realize that skinny butter chicken sounds like an oxymoron, but this Healthy Instant Pot Butter Chicken at Carmmy has me believing (and hoping desperately, if I’m honest) that it may be possible. It skips the (copious) amounts of heavy cream and butter from the original and uses regular milk to create that creamy tomato sauce we all love.

I was so excited to discover the new site Instantpottin’ with Poonam, which is loaded with authentic Indian dishes that can ALL be cooked in the Instant Pot. Game changer, right? This Spiced Chickpea Curry comes together in a snap once you’ve made the gravy base, which is also doable in the Instant Pot. This is very likely to end up in regular rotation in my house.
If your plan for the new year includes eating more plant-based meals, I think you’ll find this Spicy Peanut Soup with Sweet Potatoes and Kale at Pinch of Yum a great place to start. With creamy peanut butter and spicy jalapeños (which you can adjust as you wish), this dinner feels more like a treat full of flavor than a sacrifice that’s missing meat and dairy.

I am absolutely dying for this colorful Better for You Instant Pot Chicken and Spinach Ramen at Half Baked Harvest (above & top). The recipe calls for brown rice noodles and plenty of raw veggies for a majorly boosted health factor. To make it extra skinny, skip the bacon and hard-boiled eggs, or scooch them to your kids’ plate since they can probably use the extra fat and protein.
