It’s time to get that meal plan together for next week and I’m excited to share my meal plan ideas with you. And yes, this is my actual plan for my family of four will be eating.

Maybe you make them all, or maybe they just give you a few ideas and inspiration – because we can all use that friend to answer the question: “What are you cooking for dinner, because I’m tired and out of ideas”.

New Weekly Meal Plan Ideas

Ever since I tried the TikTok recipe for Crispy Tofu with my son, tofu recipes just keep popping up all over the place. This recipe for Sesame Tofu With Coconut-Lime Dressing and Spinach that Nik Sharma created for @NYTCooking stopped my scrolling in it’s tracks.

It looks amazing and I can not wait to try it for our Meatless Monday. You may need to create an account with the NYTimes to get this recipe — but it’s worth it.

Easy chilaquiles with eggs from FoodieCrush

For Taco Tuesday, I’m combining it with Breakfast for Dinner and whipping up these Easy Chilaquiles with Eggs from FoodieCrush. Chilaquiles are one of my very favorite Mexican meals and if you are short on time, you can use your favorite canned enchilada sauce rather than making your own. Also, this meal is extra delicious when served with an ice cold Margarita (for the grown ups of course!) and a side of guac.

Baked Salmon in Foil from Well-Plated: One of our favorite new meal plan additions

Last week, my son had his wisdom teeth removed. Just fyi, a teenage boy is hard to keep full on just smoothies and soup. So I did a bit of research and learned that salmon is actually a really great meal to prepare after mouth surgery because it is so easy to chew and is high in all kinds of anti-inflammatory goodness. I found this recipe for Baked Salmon in Foil by Well Plated from Erin and it was a huge hit! So I’m making it again this week, using one of her suggested variations.

It’s so easy to prepare, and while it’s baking, you can whip up some mashed potatoes, rice or another grain, or a huge green salad to go with it.

Carbonara Pasta Pie from Spook Fork Bacon: A new favorite in our weekly meal plan lineup

Everyone loves pasta carbonara around here — I mean what’s not to love? Bacon, pasta, peas, and did I mention bacon? So I tend to make it quite often, because it’s so easy and fast, and I usually have all of the ingredients on hand. This week, I’m going to mix things up a bit and try this Carbonara Pasta Pie from Spoon Fork Bacon. Maybe it’s just me, but I think food is just that much more fun when served in pie slices.

 

Trader Joe's Carne Asada Fries Recipe Hack via Food is a Four Letter Word

I’m planning a trip to Trader Joe’s this weekend to stock up on my favorite TJ’s specialties, and when I do, I always make it a point to buy a few of their Carne Asada Autentica for the freezer. Trust me, if you have a Trader Joe’s nearby you will want to grab a few of these for your freezer – they are lifesavers and so so good.

I was pretty excited to find this recipe for Trader Joe’s Carne Asada Fries Recipe Hack on one of my favorite site, Food Is a Four Letter Word. It’s a perfect, no-hassle, end-of-the-week meal that everyone will love. If you don’t have a TJ’s nearby, your local supermarket will most likely have a similar option in their deli department; just ask at the counter.

 

Pink-Cuisinart-Ice-Cream-Maker

I was unpacking boxes this past weekend and found my Cuisinart Ice Cream Maker and it was like the universe said “you need to make ice cream”.  And I am not one to argue with the universe.

If you don’t have one of these handy little ice cream makers, it is totally worth the investment if you ask my kids — and how cute is this pink one?

 

Cookies and Cream Ice Cream from Chew Out Loud

Luckily I had all of the ingredients I needed to create this Cookies and Cream Ice Cream recipe from Chew Out Loud right away. It’s super yummy. This weekend, I am going to grab a box of Vanilla Joe Joe’s while I’m at Trader Joe’s and replace the regular Oreo’s for a fun twist. If you have a box of Lady Gaga’s Oreos laying around, those would probably make an even more beautifully unique bowl of ice cream.
